Food sustainability is not often at the forefront of a university student’s mind - especially when healthy eating is involved. We choose foods based on convenience, taste, and price, and this usually means more takeaways are consumed. However, this does not have to be the case. As daunting as this topic is, eating healthily and sustainably can be easily achieved by just choosing healthier options.
During the past few weeks, myself and 3 other dietetic students have been collating and creating useful healthy eating resources for Coventry University students to use, with the aim of promoting healthy eating within this demographic. We have created recipe cards using sustainable food options, helpful factsheets, informative videos and shared our knowledge of sustainable healthy eating in the Hub. We understand that students come from varying financial backgrounds and cooking abilities, therefore, the recipe cards are easy to follow and have been designed specifically using cheap, accessible and sustainable ingredients.
So how can we choose sustainable options?
Buy your food products from the Coventry Market- food products here are locally sourced, fresh options with lower air miles. It also helps support local businesses!
Reduce food waste.
Reduce meat, fish and dairy consumption. (This doesn’t mean we have to turn vegan, however choosing more veggies lowers the carbon footprint of your meal and actually means we follow more of the Mediterranean diet which contributes to a healthy heart!)
But, how can I eat healthily whilst being on a budget?
We always think that eating healthily is more expensive but it is not always the case. There are a variety of sandwich options on the shelves, all the same price, but all with different nutritional contents. We can identify the healthier options by taking a look at the traffic light system on food packaging. Choosing greener options rather than the red means that these food products have lower fat, saturates, sugars or/and salt. This helpful government scheme can help us make quick comparisons between food choices at a glance so we can make healthier choices.
